How do I add these columns? When I go to my Prod instance I don't even see it at all.

Because those fields are dot walked, you'll have to right-click on header, and use Configure > List Layout:
then find the Request field, and click the sign between the 2 lists

I can see that as an admin but for regular ITIL user they don't have that option.

You would have to give them the personalize_list role.

Hi John,
What Michael showed above is just for admins to set the default list of columns, after that users have the option to personalize the list themselves.
Make sure you have access to those columns in prod(ACL)/ make sure those columns are present in prod.
