Question about Flow Designer

Hello, I am used to creating flows where the trigger is a RITM, then approval (s) are required, then SCTasks.  However, I have a flow, please see screen shot below, where the trigger is the user submits a catalo, then tasked are to be created based on which of three selections the requestor selects on the catalog.  Can I get help on how to set up the trigger and the three selections?  I know how to create the SCTasks.  Please explain it simply. Thank you!

You can add an If Condition on the Variable which has those choices and based on the Values you can create Tasks and subsequent Flow activities
