Hi All,
I am looking for some documentation on how to read information from PDF and display it on the form. I know ServiceNow does not have out of box functionality.
Can someone please share any related documentation?

as per my knowledge we not read and copy data from pdf but i read that we can use document viewer to read pdf or other type of doc files.
try it
Document Viewer enables you to view documents directly in the Now Platform rather than having to download them.
Document Viewer supports viewing various file types in the platform. The maximum document file size that Document Viewer will display is 50 MB. To use the Document Viewer, enable it at instance level and for the tables for which you want to use it.
The inline Document Viewer plugin only works for PDF documents
