You can rename the "-- None --" option by going to System UI > Messages and searching for the "-- None --" message. Open up that record and change the message value. This will change the text for the drop down None message.
This will yield a dropdown value that looks something like:
Watch out though, there may be more than one "-- None --" record...you will want to play with them to see which one changes the drop down value.
