UI Policy Hidden Variables are showing up in the My Work - Approvals

Hi Community!

 

I have a weird thing happening in Utah.
These 2 variables are hidden from the front end on the Catalog Item Form in the Service Portal

yet after submitting my Request I am seeing them on the order status screen as well as the approval screen.  Any ideas as to what could be causing this?
I have debugged UI policies and found nothing that conflicts. Found no issues with any client script types either. I am baffled!
