I deleted a variable set in a scope application using studio. Can I restore it or I am out of luck?Help appreciated.

Please try this
- Go to sys_metadata_delete.list (Deleted Applications File) in the Filter Navigator
- Query where name = 'Display name of deleted field' (In this case it is VIP Flag) and click on the Dictionary Entry record

If the record is marked as deleted in your update set, you should be able to click it.
Open the Customer update record, there is an UI related link action to "Show related record",
clicking it will open the deleted record, and from there, there is an UI action to restore the record.

HELLO
try this
1) Go to your update set and click on information icon on the deleted customer update like below
2) Then after opening it do a right click on the banner and click on show related record
3) Then click on restore UI action like shown in below screenshot
