Hi,
We want to map the state field from an Incident to an issue in JIRA using the JIRA spoke while using the 'Create Issue' action.

Sudhangshu, hi. I must admit, I've never used Jira Spoke - we use another integration tool to connect SNow&Jira & sync them. It has advanced mapping features, which work great for me. If you have your integration already configured it seems that you just need to make sure you have this field being registered:
from this document (unfortunately I could not find a document describing the process): jira-spoke-v3-0-2
Use the Jira Webhook Registries module to assign a token and provide the API path. You must generate a Callback URL here and provide this URL in Jira. A default routing policy is provided in the Jira WebHook Routing Policies module. The default routing policy supports these fields:
Where you can see that the state/status field can be mapped.
I have to add though that it is very labor and time intensive to set up these kinds of connections.
Allow me to propose an alternative that is super easy to setup and allows you to map the status + any other field very easily and with very little effort.
Have a look at Exalate. As it provides what you need with plenty of extra power and flexibility.
