Is there any documentation that can show on how many sctask tickets can be generated in RITM ticket.

ServiceNow does not have a fixed, hardcoded limit on the number of sub-tasks (sctask) that can be generated for a single Requested Item (RITM).

@Codi , There is no official documentation as such. However, we have to be cautious if sctasks are more in RITM could lead performance issue/database .
