When Demand is cancelled, it triggers an approval task also in cancelled state, is this OOTB ?

Seeing as how there is not a way to 'cancel' a Demand OOTB, then no. Look for a flow or workflow running on Demand records, or a Business Rule that is creating/updating the approval task.

When you say "Cancelled," do you mean "Deferred" or "Rejected" from the list view? and I don't see any approval task when Deferred or Rejected
You may provide more details (please include screenshots if you are comfortable).
