When label changes on sys_choice table for any element didnt update the updated timestamps on prev

When a choice label is changed in the sys_choice table, existing records display the new label, but their updated timestamps remain unchanged.

For example, the Category field on the problem table has a choice labeled Software, which is used by 100 existing records. When the label is changed to Software IT, all 100 records display the new label, but their updated timestamps do not change.

How can we capture the time of this label change on all affected existing records?

Thank you for the elaboration, now I better understand the issue and the circumstances.

As far as I know, this is a limitation in the platform regarding (Excel) exports and choice fields. You are limited to export the display value only, and never the actual value which is the same in the case you described in your scenario.

I cannot say which solution you should go for, since I don't know the target platform. In general terms a mapping/transform in the target environment of both these exported values into one common value seems like a doable approach, although it will require maintenance since there will probably be more changes of choice field down the road. 

If these workarounds and transforming/mapping style solutions aren't preferred then I would rather go for setting up a specific scripted REST API to retrieve/expose the exact data you require for your export.
