is there a way to determine which workflow, auto-assignment rules etc. are associated with a  specific assignment group?

As far as I know in ServiceNow, there isn't a single place that shows everything linked to an Assignment Group, but you can trace associated workflows, auto-assignment rules, business rules, and other logic. Below are all the places we can check based on table or module you want to know:

Assignment rules

Scripted business rules

Flow designer flows

Workflows with Assignment steps

Script includes

You need to check these Assignment Rule(sysrule_assignment), Workflows, Scripting (Business Rules, script includes).
