I am learning Platform Analytics and I don't see an option to build dashboards where I can combine multiple tables; is this possible?

Not directly that I am aware of.
Platform Analytics doesn’t let you join multiple tables in a single widget. PA works off indicators, and each indicator is based on one table or one prepared data source.
What you can do:
Put multiple PA widgets (each from different tables) on the same dashboard
Use breakdowns to slice an indicator (but still within the same table)
Create a database view or scripted/aggregate table first, then point PA at that as a single source
What you cant do:
Join tables inside PA like a report
Build SQL style dashboards directly in PA
My recommendations:
Use PA for trending KPIs over time
Use Reports when you need multi-table joins
