Date offset quantity, Date offset type, and Date offset units are all on the HR Task table but I can't find any documentation or community posts on how they're utilized. I thought they might be able to adjust the due date on insert but it didn't change anything.

I was wondering about the date offset fields on the HR Task table, not the date offset fields on the activity set table. I'm familiar with those and as the other replies pointed out, there is documentation for those fields.
However, that helped me to find what the date offset fields on the HR Task table are used for. When you create an individual activity (not an activity set) with a type of "content", you can set a date offset that will determine when the content is made available for the user. This seems to be the only use case for them.

I have not worked on HR Task. But looks like there are some documentation
