Modify AI Search Display Results for AI Search Assist widget on Catalog items

Hi I am looking to change the display of the summary text to only show the first 250 Characters of the article when using the AI search assist widget on a catalog item. See below. 

We would also like to include meta in the search index. We have already updated the Knowledge EVAM and text index records and it works using the standard search functionality, but those settings do not seem to change the behavior of this widget.

It was a problem in my record producer AI Search configuration. When I changed the Search application to the Default ESC Portal it began using the same search settings we have configured for the portal
