Cannot create Appointment Booking Service Configuration record

I am following the steps in the Guided Setup for Walk-up Experience. When I get to the step to create a Appointment Booking Service Configuration record, I am faced with the 'Catalog item' field showing no results being returned even though there should be record producers present to be selected.

However, when I go into a sample record on this table, I am able to see records show up in that field that I can select.

Any guidance would be appreciated as I am unable to configure the records needed to test scheduling an appointment.

Note: I am logged in as System Administrator in two different instances and facing the same issue.

All instances have the Walk-up Experience plugin installed with demo data. The two screenshots are from my PDI.

SOLUTION: I discovered that to successfully create a new record on the Appointment Booking Service Configuration table, it has to be done via a related list on the Appointment Booking Configuration table.

You have to go into the existing record named 'Walk-up Experience' on that table and then click new on the related list at the bottom of the form (see screenshot attached below).

Changing the application scope from global to Walk-up experience solved this for me.
