When we submit a form variables are displaying under the description field but employee number and email fields are missing in overview of the variables even though variables are mapping. How can we resolve this

When the variables are mapped correctly but Employee Number and Email do not show in the submitted request overview I would first examine the configuration instead of the mapping.

Ensure that Employee Number and Email have the option ", on Summary" turned on in the catalog variable configuration. Also confirm whether they belong to a Variable Set because the summary behavior can change based on the variable set configuration.

If Employee Number and Email are already set to show in the summary look at the submitted RITM. Verify that the values are really stored in sc_item_option or sc_item_option_mtom.

If you share the configuration or a screenshot of the overview I can point out exactly what changes are needed.

Variables are mapping to sc_item_option_mtom table returning the correct values but its not varaible set its variables only

You need to validate the variable Permission, Validity, UI Policy, Client script for these two variables.
