How to edit Fields after submitting a request in Servicenow

Hi,
I want the fields under variable section in the request form need to be editable once the end user submits the request for one specific catalog item. How can i achieve it?

Who, specifically, do you need to be able to edit the fields after the request is submitted?
On the RITM itself, for an itil user, unless you have set the variables as read-only via script or UI Policy at the item level, they should be editable. The same would apply if you add those variables to a task; as long as you don't have a script or UI acting on the task level, the variables should be editable.
