I need to verify "from address" in the email notification is correct without sending emails (Because it is a pre-prod instance and we don't want that email to go to client).
Highlighted part is the from address.

Hi Bharath,
Since this is preprod instance please add some test email id or your personal id just for testing few minutes in Email properties and revert back once done, next go to email logs and check for 'user' field which will display from address. Please see below screenshots.

Hi Bharath,
Since this is preprod instance go to email properties and uncheck send emails check box for sometime and test, this will make sure emails will be in send-ready state in email logs and you can check from which address it has sent. Mark my answer as correct or hit like based on impact.
and in Email logs check for 'User' field to find 'From' address like below
