With the * you are performing a 'wildcard' search for any items that contains the phrase after the *.
Just typing 'can' you are searching only for items that begin with the phrase. This behavior works across all search options in ServiceNow.
Or am I missing something particular to your situation?

So essentially setting the default to a wildcard search, without the need of typing in the *? I'm not sure that search can be setup to do this
