Hi Ryan,
as per your earlier screenshot you wanted to check for the Requested for field
But the ACL in the image is for the caller_id field. Is the label changed from Caller to Requested for on incident
please check the ACL for the Requested for field?
As per the ACL the caller_id field would be editable only for new record.
If you are trying to edit the field for existing record this ACL would block you.
Also check any list_edit ACL on that field

Hello Ryan,
I am guessing this is the created by/updated by field which is from the Task table.
There is a OOB ACL which always returns false and is not able to be edited for Admins too, i suggest you to not change the settings for this. But here is the ACL
