Hello, i am looking for some advice in regards to getting usage stats from the Self Service Portal.
This like, number of visits to the sites, where the users are located, items they are clicking on (that type of thing)
If anyone has a good way can they please share

In the Service Portal app, there is a module Usage Overview. That might get you started.

If you have Performance Analytics (PA) you can go to the store and get the Performance Analytics Content Pack for Service Portal.
ServiceNow® Performance Analytics Content Pack for Service Portal allows administrators to monitor the traffic across all portals. Administrators and service delivery executives can use visitor and view metrics to improve the portal experience, increase satisfaction, and drive adoption.
This content pack is available to customers with any form of Performance Analytics entitlement.
