You can do it at the knowledgebase level. There is a tab called can read in the knowledgebase record, that can control who can see knowledge articles in that knowledgebase.

I dont think you can do it in knowledge v3.. is that knowledge management version that you are on ? knowledge v2 had a roles option per article which allowed us to control access at the article level but in v3 it has to be at the knowledgebase level.
If you would like to show hide the articles from a set of users then I would suggest moving them to a different knowledge base and control access to it over the can read option of the knowledgebase.
I would let others share their thoughts to see if they come up with a solution.

I do as well - does the knowledge blocks process allow obfuscation by category?
