UX List Menu Configuration issue - Columns and Conditions not applied to lists

Hi,
I have configured a UX List Menu Configuration (sys_ux_list_menu_config) record with categories and lists to use in the Service Operations Workspace.
The lists are all showing different tables with different columns and conditions and it was working fine until a couple of days ago. Now all the categories and lists' names in the workspace are correct according to the UX List Menu Configuration, but the filters on the lists are not applied and the columns are not showing as they should (I assume it is applying some default view).
I have gone through views, view rules, user preferences, UI lists & list menus, even scrolled through all changes in the Customer Updates (sys_update_xml) table from the last few days and checked any cross-scope privileges that might be affecting it and still unlucky.
Do you have any idea what might be causing this?

Hi @Dr Atul G- LNG,
Apologies for not providing screenshots when I was posting the question. Definitely would be better and easier.
The most simple example I can give is this first screenshot below which is the UX list of my UX List Menu Configuration. The configuration record has been selected on the list page in the workspace through UI Builder and the highlighted columns and conditions should be applied on the selected table:
And here is what is showing on the list in the workspace:
The columns selected on the UX list record are only Consumer, Created & State, but it differs from what it's shown on the list. Also, the list in the workspace is showing all the records from the Case table (the filter "Medical Task - is - true" should be picking around 200 of all records) therefore the filter doesn't apply as well.
