I am looking for sample applications to get more hands-on experience.

I'm interested in starting some beginner-friendly projects that involves Creation of groups, Roles, User, and Tables.

Are there any other ideas how to find a ServiceNow project to have some hands-on experience.
Any guidance on how to approach these projects or resources that could help me get started would be greatly appreciated.

You can check this ServiceNow developer course which guides you to build application from scratch:

To understand basics, you can use ServiceNow learning platform to learn about CAD course. Some ideas I can suggest is to try and build custom application like Employee leave tracker, Vehicle parking management, etc..
