I learned how to create the formula

Formula Indicator:
Name: Average age of open ITS catalog tasks
Formula: [[Summed age of open ITS catalog tasks]] / [[Number of open ITS catalog tasks (daily)]] / 24

But I have been asked if there is a way to exclude outliers (certain catalog items, or assignment group, etc)

Add the appropriate breakdowns you want to the contributing indicator and the formula indicator and use a filter on a dashboard.

Or create new indicators for the existing indicator sources and filter out the scores you don't want and then use those for the formula indicator.
