Can you edit a survey response?

Hi,

We have a use case where a user has accidentally given an excellent assignee a poor survey rating by mistake. The user who made the mistake has sent the admins an email stating they'd like the survey result to be changed, as they admit their mistake and would like the survey to reflect the excellent quality of service they received.

I have assessment_admin rights and admin rights, but when I go to edit the field in the assessment instance, ServiceNow says "Security prevents editing the field".

Is there a way I can correct the user's mistake? I know it's not common practice to amend survey results, but this is a special case.

I would look at the table ACLs specifically around write.  Most likely you would just need to check the box Admin override on the ACL.  Or you could try running a script in scripts background to make the updates.
