I have a catalog item that shares a generic workflow(used by 200 catalog items). How do I change the Delivery time for a particular catalog item?

Did anyone else up figuring this out? We have the same issue.. Roughly 25 workflows and close to 100+ catalog items.
I have the final task due date reflecting individual delivery times but cannot get the Checkout cart delivery time to show anything but the Workflow time which is not correct since individual items in the same workflow have different deliver times.
