How to i select multiple Incidents and change the state from "Assigned to" to "Work in progress" ?

Find the tickets in a list view and right-click on header to select either Update Selected or Update All:

Do the as above but if you want to do it all at once go to Service Desk>My work insert your criteria through the breadcrumb trail and do the same that way. 

If you have access to list edit keep your finger on the Ctrl button and select multiple records. (See example below)

In the list view, Press Shift key + down arrow key and select incidents and then change the state by double clicking on the state field
