I would say;
Be clear about how the workflow should behave, not just the steps—approvals, exceptions, and ownership after go-live. Insist on modern, supported tools and avoid legacy approaches that are hard to maintain.
Last I would say, require basic documentation and a handoff so you’re not dependent on the vendor long term.
