Adding a Page header caption for "Next Experience" like in the UI16 model

I am attempting to convert to the Polaris theme in the Next Experience and I need to identify the environment (Prod, UAT, Dev, etc.). In UI16 there was a field called "Page Header Caption" however I can't find any way to do this in the Next Experience. I know we can use colors (which I am doing) however I want it explicitly shown.

Hi John
I know of that configuration options, I have a screenshot of it in my original post, however I want the equivalent option for the "Next Experience" using the Polaris theme.

Hi John
This is not what I am looking for, I know how to enable the dark theme. I have created a few custom themes but in the users preference, it still shows the "Default" theme selection and my custom themes. I want to not allow the user to select the default theme and only select from my custom themes
