I have a record producer which output a task. There a 40+ variables which I filter using UI Policies depending on some questions the user answers. The user may only fill 10 of them in the initial form. When they hit 'Submit', all 40+ variables are listed in the TASK even the user only needs to see the 10 they filled. Is there a way of removing(filtering) the ones that are not needed? I've try selecting 'Applies on Catalog Task' and Applies on the Target Record' options, but it has no effect. All variables show.

you can create a catalog UI policy which applies on Target record and hide those variables
It should work provided the variables you are trying to hide are non-mandatory
If any of those is mandatory then it won't be hidden
share your configuration screenshots.
