Hi @itspezi1,
Whilst this is easily achieved (as shown below), a word of caution or something to consider if this is a new instance implementation (which is the perfect time to set the default currency) or if the instance has been running for a period with pricing already associated to catalog items or other tables. If that's the case you will need to take this into consideration. (Existing data)
To change the default currency, simply type 'system localization' into the Navigation menu as shown below and change the currency field to 'EUR' (typically defaulted to 'USD').

You need to also select 'Use single currency model..' for it to take effect

Even if selecting Use single currency model - dollars is still appearing on certain fields
and even pounds on other fields
