since you are talking about Requests, that field as per KB shared by Atul gets populated only for P1 incidents
If you want to populate it for Requests, then you need to create inactivity monitor for sc_request table
check this but it will only populate for new records and not for older REQs

You must be checking non-P1 incident. It is expected behaviour.
Inactivity monitor is only created for "Priority One Inactivity" incidents.
Hence all other non p1 Incidents show "Activity due" as 'Unknown'.
