Unfortunately, ServiceNow currently does not provide a built-in option to disable or hide the total columns (or rows) in Pivot Table visualizations or reports on dashboards. This limitation is confirmed by multiple discussions in the ServiceNow Community, where users have requested the ability to remove totals, but responses indicate that this is an "under the hood type functionality that isn't customizable" via the UI or standard configuration options.
You may want to submit this as an enhancement request to ServiceNow, as it is a common pain point for users working with metrics that should not be aggregated in this way.
