The Learning Assist AI is not working well

The Learning Assist AI used in Servicenow Fundamentals LabX is not working properly, the task is completed, yet it shows changes are yet to be made. This is the second time i got the issue with the assist, the first instance was terminated and now i am using my second instance, above 60% of labs are done

This is a known trip point with what LabX calls the AI Learning Guide (that's the official name behind the assist widget). It validates Validate Task against the actual record state in your live lab instance, not the rendered form, so if a Choice variable's label shows Crimson but the underlying value wasn't committed, or the catalog item is saved but not actually Published, the form looks finished while the check still fails. Since you've also had an instance get terminated mid-course, that's worth flagging separately: re-verify each field directly in the record rather than trusting the widget, and if it still won't clear, open a case with Now Learning support with your instance ID and the exact task name so they can pull the AILG log against that instance.
