I am Process analyst new to ServiceNow Ecosystem and found the univeristy courses coupled with the instance are great resources to learn.
for the job market do they accept those courses as qualifications or the mainline certifications are the one that recruiter considering

At least In India, Company valued the people who has ServiceNow certification with real knowledge on servicenow Ecosystem (Not those people who has certification but not having any knowledge 😀 )
For Job Market - when Interviewer takes interview , apart from candidate's completed mainline certification, they check the candidate knowledge (mainly hands-on). If you have, you are .preferred candidate for selection.

Being a ServiceNow trainer and a BPC, I’m happy to share my thoughts.
Certifications hold a very important place in today’s ecosystem. When a resource is certified, it helps organizations win projects and deploy certified professionals on specialized engagements. However, the real question is how many certifications a person should pursue.
From my training experience, I always recommend gaining hands-on experience first and then going for certifications. Certifications give you confidence, but without practical experience, they can be challenging and may not be very effective in interviews.
It can also feel ironic that organizations often look for certified professionals even at the fresher level. In my view, starting with CSA or CAD is a good way to enter the market, and the rest should come with experience.
More than that

Spend at least 1–2 hours daily on the ServiceNow Community. Observe the kinds of technical questions being asked and how experienced members respond. You’ll learn a lot passively this way—and I highly encourage you to start answering questions as well. Explaining concepts to others will improve your technical thinking and deepen your understanding.

first thanks for sharing your feedback. actually I was thinking this way as well spending alot of time on the university and practicing with the instance before approching certifications. I have more question: from your experience as BPC which servicenow community is best for BPC you recommend.?
