I have created a table.
table having a state field and assigned to field
I am sending a notification to the assigned to person when the record was created
initially state was in new state
Task:
add a button in the email
when the user click that button
state should change in the record to achieved state

You can define an Email Inbound Action, which will update the record when the Assignee reply to the email "the record was created".
You can refer to the OOTB notification Incident Resolved.

The last task, can be achievable view Email Inbound Action.
