How to Update the Approval for an RITM after it was submitted

Good day,
i have an issue where sometimes when a user submits a catalog item for approval, they might put in the wrong approver. 
so instead of resubmitted the entire request again or rejecting and go through the entire approval process again with previous approvers, i would like to see how i can update the current approver to a new one without restarting everything all over again.

 

I have a field on the request called approver, ideally i would like to have the user to update that approver field on the request and then updates the approver list automatically

 

please let me know what i can do in this situation

why not put a validation on that approver variable so that always correct approver is selected?

i would do that but what if the approver is on vacation or forget to approve it, then the user would need to update the RITM approver to another person to approve it.
