I want to remove Out of the Box things like order guide details, quantity, price, total $ etc from the submit section of the Order Guide in Service Portal.

Did you check on all the options you have on the catalog item form? There are a lot of 'no_xxxx' fields that will let you hide stuff. You could just set them to true by default for new items and update the existing ones.

Yes, these are somethings which cannot be removed by the on screen options
