you can't remove that symbol.
with the use of that symbol system allows you to search and mention user
You can disable that feature if you want completely.
But I won't recommend disabling that

@symbol is reflecting when tagging to someone in worknotes.
when we tag @ symbol supposed to go and person name should only be there but along with person name @ symbol is also reflecting

yes that's OOTB feature and I won't recommended to do anything for that
if your customer still wants then
you can use before/after insert BR on sys_journal_field and remove that symbol

In ServiceNow, the "@" symbol appears when you tag someone in any table's work notes/comments because it is a designed, out-of-the-box (OOB) feature meant to trigger a notification to that user and create a link to their profile.
When you type '@' followed by a user's name in the activity stream (work notes or comments), ServiceNow interprets this as a "@mention" request, transforming the text into a functional link (often formatted internally as @[username]).
