We were tempted to remove that Show me everything button when we moved to the Virtual Agent, I am glad we did not! We have the most commonly used Topics available in the list. We use Promoted Topics when we need a Topic to stand out and be in the greeting.
About 75% of our users simply type what they need help with, the other 25% uses that button. We actually changed it to Common Topics since we do not have ALL Topics displayed in the list. We also changed the greeting to a simple, "How can I help you?" after we did that change, I noticed users typing what they need help with instead of depending on the "Common Topics" button.
I strongly suggest not removing that "Show me everything" button, especially if you integrate with Teams, I noticed those that use the VA in Teams depend on that button more. (I do not understand why!)
