Dear Community,
am not able to select Trigger - Record Created or Updated > Issue Record > Assigned to > Email.
The Email is faded out as show in the screen-shot
For some reason have deleted previously created flow design and when I am trying to create new with same details the Email selection is faded-out

Hi,
It seems you miss understood the "target record" field. The target record is the object you would like to relate the email to (e.g.Incident or other tasks) . The mail address will be entered at the TO field. More information can be found here.

Hi,
Even if you force it to work. Your email will be not work as intended as it'll have junk data.
However it'll be good to use correct field, which is "Assigned To" in this case.

Sorry, than I missunderstood your screenshot. In the screenshot it looked like, that you are selected the wrong field. Beside reloading the flow designer or to add the action again to the flow, I wouldn't have an idea, what could be the issue. Because the flow designer validates if the field type fits to the action input variable. And that is the only reason, why you should be able to select the field.
