Hello, please elaborate and let me know how exactly you would make the Assigned to field on the incident form Read only once the incident state is Resolved and Closed states?

OOTB it is via UI policy where the condition has been configured

UI policy is low code, and you can make the "Assigned to" field read-only using a UI policy in the same way.
