you can apply field style to list field in Workspace using UX Highlighted Values
There are many OOTB ones, see that and add for your table and field
Configure fields as highlighted values in a form

In Workspace, this isn’t something you change with UI Policies or client scripts like on classic forms.
The color of the Risk field is controlled by the Workspace UI (UI Builder). Out of the box, Workspace only supports its built-in “semantic” colors critical, warning, info, not fully custom colors per choice.
So you have two options I see here:
Supported / OOTB option
Go to UI Builder
Open the Change form page used by your workspace
Select the Risk field component
Make sure the value mapping is correct (High → critical, Moderate → warning, Low → info)
That’s as far as you can go without customization.
Custom option
If you specifically need High = red and Low = orange, you’ll need to customize the form in UI Builder:
Use a custom or extended component
Apply conditional styling based on the Risk value
Just keep in mind this is Workspace only customization.
So ultimately:
You change this in UI Builder, not on the field itself — and custom colors require custom UI work.

It would be helpful if you could include screenshots with your comment, as they make it easier for others to understand whether your response addressed the requirement.
In this case I believe we need not make any UI builder changes within the workspace.
I don't see any Change form page
