How can we change the label of stage in RITM below picture
Request approved to : requested item approved
Are those values set from workflow if yes then check stage table under workflow and change the display name. Refer screenshot below
You can Edit/Create new stages in workflow and Use them in stage field in workflow activity.
Note : Not recommended to update backend value of existing Stage.
In workflow , Click on Hamburger icon (highlighted) >> there you will get the option "Edit Stages" >>Create new stage

I tried that but its not updating ootb values where are these stored?

You need to update the properties of workflow :
In workflow , Click on Hamburger icon (highlighted) >> there you will get the option "Properties" >>stages
Put Stage rendering to Requested Ritm rendere
