The out-of-the-box (OOB) priority lookup on the Incident table isn't driven by a Client Script. It's implemented through Data Lookup Definitions.

To build priority lookup on incident table , you need to set the Data definition rule and create the records in Priority lookup table as per your requirement. No client script is needed.

why you want client script?
you can configure it for your table and system handles the rest.
