Date Time Picker modifications for Service Portal possible?

I'm looking to change the date/time picker for some service portal forms.  I would like to change it so the options available for them to choose from are only every half hour, and between specific hours.  Also changing it so it doesn't display the seconds after they select would be nice, you can't pick them and they don't really matter in almost any situation we ask for date/time in the service portal.

There is a option to set the stepping

I have not tried this myself, but it is something you might want to look into to see if it works for you.

Don't know that I can incorporate that, but at least I can see it is possible.  It seems like people have been asking for this for a while, I see posts going back for years.  Seems like something similar would be included by now.  But that might help me to figure out something, thank you.
