So just configuring the Employee Center and noticed that a non-itil user can't see their request, even though the "My Active Items" widget shows the correct count.
How can I fix this as I am fairly new to Employee Center?

The "My Requests" page uses configuration records on the My Request Filter table (request_filter). Its likely that the conditions do match the counts from the activity configurations on the home page to the Request Filter record

So that's the same thing support advised....
"Need to check request_filter as that table is responsible for filtering on my_lists & other Service Portal pages that display data"
But I do not see anything on the My Request Filters table that relates to Employee Center or the "My Requests" page....and the Service Portal is working perfectly fine and as expected so doesn't seem like I should change anything related to the Service Portal.

The Portal Page you have highlighted is just the redirect for when you click the record on the My Requests page. For example, if you had an Incident listed it would take you to the "ticket" page on click.
You'll need to filter by the ones that are for Service Portal as seen in the "Applies to" column. Then open the record and you'll see a condition. You'll need to make sure that condition matches what's been applied in the Activity configuration.

So I figured out the page redirect when I tried to make my own request_filter.
I just can't figured out how this Activity configuration correlates to the Service Portal page. This activity configuration is clearly for the "my_requests" page, but I don't see how the filtering works in relation to the request_filter (which is the 2nd screenshot). I mean the filter is pretty generic on the sc_request table which redirects to the correct page "order_status". I'll also point out these are both OOTB and haven't been modified in any way, which is even more confusing why it doesn't work out of the box.
