How to Override Choice List Option

Hello Team,
I want to override the Choice list options for Impact field which is created in TASK table.
I want a Dropdown with None option for a child table.
Is there any way we can do that without creating a New field?

PS: Also we want to make Impact as mandatory so creating a choice as None is not helping.

you need to add --None-- in with a number as the value
