Good afternoon
Please guide me on the following: I have a catalog item in which an idea can be logged
Once logged the variables appears in the RITM.
The idea has to be approved or rejected by the idea logger's manager. Not all managers have the ITIL role so I was thinking of adding the variables that the manager needs to fill in, in the approval email.
I don't know how to do this part. Any ideas please? Or is there a better way to do it?

Hello, I understand the requirements
but it is not practically good thing to do
instead ,you can provide them the rest of the variables so they can understand what they are approving or rejecting(refer this article to see how to add variables )

I think this won't be possible. Not the adding of the variables, but the processing of the email when it returns. From the look of your variables, they are all mandatory and all contain predefined choices. That means that a simple typo can already prevent the correct value from coming in.
I understand not wanting to grant approver roles, but I think that will be the only thing that works in this use case, since you are asking them to update an existing record (not just approve).
Have you checked out the OOB idea mgt module?
Also: if a Servicedesk agent creates an idea about improving the service in the lunchroom, shouldn't it be evaluated by a facilities manager?
